Cocoa Process

Through a careful process of cultivation, washing, fermentation, drying, and selection, we guarantee a product with the purity and quality that distinguish Peruvian cocoa. Each stage reflects our commitment to sustainability and excellence.

Harvesting

Once the beans are separated from each cocoa pod, they are washed in large baskets until the mucilage covering them is removed.

Breaking

When the cocoa pod is opened, the beans covered by a pulp called mucilage are extracted.

Pulp Removal

Post-harvest process consisting of removing the cocoa pulp surrounding the beans inside the cocoa pod, separating them to obtain clean beans ready for the next processing stage.

Fermentation

Fermentation is a crucial stage that allows cocoa beans to release their full aromatic and flavor potential. This process relies on microbial, biochemical, and enzymatic activity, which transforms the original chemical composition of the beans.

Drying

Drying is the process that immediately follows fermentation and must be carried out properly. High temperatures (> 60°C), prolonged duration, and inadequate final bean moisture can alter the balance of aroma and flavor precursors. The main objective of drying is to reduce moisture to an average of 7%.
